Vegan sweet Potato Pancakes with peanut butter yogurt!

I’ve made sweet potato pancakes several times but I have finally perfected my recipe!

These are SO yummy, moist and fluffy. The small ones don’t come out as fluffy because of the size but the large version (mama’s version) are!

This recipe makes 6 large pancakes or 12 small ones.

Pancakes:
1/2 all purpose flour (I used @bobsredmill gluten free)
1/2 tablespoon baking powder
Pinch of sea salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
3/4 cups non dairy milk (I used oat milk from @pacificfoods )
1/2 cup mashed cooked sweet potato (about 1 small one) I steamed and puree using my @beaba_usa
Coconut oil to cook

Topping: 

Because these are super sweet by nature I did not add any coconut nectar, instead I just mixed 1/4 plain full fat yogurt with 2 tablespoons of creamy peanut butter (this have been a favorite of Abril for a while now)

Added some raspberries (her ultimate favorite fruit for the past 2 months) and sprinkled some hemp seeds on top.

Whisk together flour, baking powder, salt, cinnamon and ginger. In a separate bowl whisk together non dairy milk and sweet potato puree. Combine dry and wet mixture and whisk. Be careful to not over mix!!

Lightly oil a large nonstick skillet over medium heat. Pour the batter into the skillet (for Abril’s pancakes I used 2 tablespoons and for mine 1/4 cup). The small ones while take about 1 minute to cook on each side (wait until you start seeing tiny bubbles). The large ones will take about 3 minutes. Flip and let cook on the other side until lightly browned and cooked through. Repeat with remaining batter, adding more oil to the skillet as needed. If the batter becomes too thick, add a little more nondairy milk, 1 tablespoon at a time.

Homemade coconut milk and coconut/hemp pancakes!!

Coconut milk is SUPER easy to make and very inexpensive. You can buy organic unsweetened shredded coconut in bulk for $5 a pound.

I came up with the idea of the pancakes when I was straining the milk and saw all the leftover pulp. OMG they were SO YUMMY and Abril really enjoyed them! We had them for breakfast 3 days in a row hehe

Coconut is packed with medium chain fatty acids and lauric acid. It has many health promoting benefits and is a great option for people with dairy allergies, vegans and for kids.

A serving of organic shredded coconut packs five grams of dietary fiber, which is equal to 20 percent of the recommended daily value. Unsweetened shredded coconut provides a boost of iron and zinc without all the sugar of the sweetened variety. Iron helps the body form hemoglobin, the protein required to transport oxygen-rich blood cells throughout the body. Zinc plays an important role in the immune system and also supports wound healing.

For the coconut milk: 

  • 1 1/2 cups of unsweetened shredded coconut
  • 3 cups of filtered water
  • 2 tsp cinnamon
  • 1 vanilla bean (or a splash of vanilla extract like I used because I was out of beans)
  • Pinch of sea salt
  1. Blend all the ingredients together in high for 2 minutes, until thick and creamy
  2. Strain with a cheesecloth, squeezing very good to get all the milk out!
  3. Set aside the pulp!
  4. Save on an air tight container in the fridge for up to 3 day

For the pancakes:

  • 1/4 coconut pulp
  • 2 tbs oat bran or rolled oats
  • 1 egg
  • 1 tbs hemp seeds
  • 1 tsp cinnamon
  • Splash of coconut milk
  1. Mix all the ingredients together
  2. Add coconut oil to a frying pan
  3. I used a spoon to measure the batter and they came out a perfect size for her to hold
  4. Fry on both sides until golden
  5. Wait for them to cool
  6. Top with peanut butter or any other butter you want
  7. Serve with some fruits!!

Leche de coco casera y panquecas de coco y semillas de cañamo!

La leche de coco es SUPER fácil de hacer y super económica. Pueden conseguir coco rallado a granel super barato!

La idea de las panquecas me vino cuando estaba colando la leche y vi toda la pulpa! Quedaron espectaculares, Abril las comió 3 dias de corrido de desayuno y cada día las disfrutaba igual hehe

El coco tiene muchísimos beneficios nutricionales y es una excelente opción para las personas con alérgicas a los lácteos, veganas y para los niños.

Para la leche de coco:

  • 1 1/2 taza coco rallado sin azúcar
  • 3 tazas agua filtrada
  • 2 cucharaditas canela
  • 1 chorrito de vainilla
  • Una pizca de sal marina
  1. Mezcla todos los ingredientes y bate por 2 minutos a la maxima potencia, hasta que veas que la leche está espesa y cremosa
  2. Cuela con una estopilla, apretando bien para que salga toda la leche
  3. Guarda la pulpa !
  4. Puedes guardar la leche en un contenedor sellado al vacío por 3 dias

Para las panquecas:

  • 1/4 taza pulpa de coco
  • 2 cucharadas salvado de avena o avena regular
  • 1 huevo
  • 1 cucharada semillas de cáñamo
  • 1 cucharadita canela
  • Chorro de leche de coco
  1. Mezcla todos los ingredientes
  2. Pon un poquito de aceite de coco en una sartén
  3. Yo use una cuchara para medir la masa y me salieron de un tamaño perfecto para que ella los agarrara bien
  4. Frie de ambos lados hasta que esten doraditas
  5. Espera que se enfríen
  6. Ponles mantequilla de maní o cualquier otra mantequilla de nuez
  7. Sirve con alguna frutitas!

Brushing baby’s teeth!

We started to make a habit of brushing our teeth every day!!

Baby teeth are just as prone to cavities as adult teeth. *In fact, more than 50 percent of children will be affected by tooth decay before the age five. *

So mamas, it is way better to start cleaning those chompers now to keep cavities away and prevent early loss of a tooth!

It is recommended to clean gums, tongue and teeth right after meals and before bedtime to maintain good oral hygiene and to fight bacterial growth.

Start brushing when the first tooth comes out! (We started late!!) You can use a gauze pad, damp washcloth, or just your finger. When the baby is older you can choose a soft toothbrush with a maximum of three rows of bristles. Just moisten the toothbrush with water and use no more than a rice grain sized smear of fluoride or fluoride free toothpaste (your choice)

We are using this silicone one from Green Sprouts and really like it. It’s BPA free and it has a round protector to keep babies from jamming it too far inside their mouths

If your child is like mine, he/she will want to brush it on its own! I just let her experiment first but make sure to clean it yourself afterwards.

Most importantly, make sure to set a good example by brushing your teeth in front of them as well!

I just stared to brush both our teeth at the same time in the bathroom, it works great since she is now trying to copy everything I do ❤

Having healthy teeth:

  • Help children chew food easily and properly
  • Help children speak more quickly and clearly
  • Hold space in the jaws for permanent teeth that are growing under the gums
  • Set the stage for a lifetime of healthy smile

Empezamos a crear un hábito de cepillarnos los dientes cada día!

Los dientes de leche son tan propensos a las caries como los dientes de adultos. * De hecho, más del 50 por ciento de los niños se verán afectados por caries dental antes de los cinco años. *

Así que mamas, es mejor empezar a limpiar esos dientitos ahora para mantener las caries lejos y prevenir la pérdida temprana de un diente

Sólo humedece el cepillo de dientes con agua y ponle un granito de arroz de pasta de dientes con fluoruro o sin fluoruro (tu decisión)

El que estamos usando es de la marca @greensprouts y es de silicona, me gusta mucho. Aparte tiene una pieza protectora redonda que previene que los bebes se lo entren muy adentro y se hagan daño

Si tu hijo/hija es como la mía, querrá cepillarse solito!! Déjalo que experimente per asegúrate de limpiarlos tu bien después!

Lo más importante, asegúrate de establecer un buen ejemplo tu misma! Yo empezé a cepillarnos las dos los dientes al mismo tiempo en el baño, y funciona muy bien ya que ella ahora está tratando de imitar todo lo que hago ❤

Tener dientes sanos: 

  •         Ayuda a los niños a masticar alimentos mas fácil y adecuadamente
  •         Ayuda a los niños a hablar más rápido y claramente
  •         Ayuda a mantener espacio en las mandíbulas para los dientes permanentes que         están creciendo bajo las encías

Mini tuna and pea quiches

Ok, so these were not the prettiest but they were super delicious and super easy to make!

It was Abril’s second time eating tuna and she really liked it. I love how her palate is evolving, she used to go more for sweet, softer foods and now more and more she is enjoying savory meals, spices and textures.

I served them with some sweet potato puree and two slices of cucumber

  • 1/2 can albacore tuna (in water, drained)
  • ½ cup of frozen peas
  •  cup cheddar cheese
  • 2 eggs (only one pictured here but I used two)
  • 1/2 cup milk (I used @ripplefood pea milk)
  • 1 tbs nutritional yeast
  • Black pepper
  • Thyme
  • Optional: 1 tbs white flour
  1. Preheat oven to 350f
  2. Beat the eggs with a fork
  3. Mix all the ingredients in a bowl (You can choose to blend everything if your baby is younger or you just don’t feel comfortable giving them chunky foods)
  4. Grease a muffin tray and spoon the mixture evenly into each space (I always use this tiny silicone molds)
  5. Place in the oven and bake for about 20 mins or until golden (I always stick a knife inside to check if the eggs are not runny)
  6. Take out of the oven and LET IT COOL COMPLETELY before serving
  7. I made two quiches last night and saved the rest on an air tight container in the fridge for today’s lunch

Mini quiche de tuna y guisantes

No fueron los mas bonitos jeje pero salieron riquísimos y son super fáciles de hacer!

Era la segunda vez que Abril comía tuna y le encantó. Me encanta como su paladar está evolucionado, antes se inclinaba mas por lo dulce y ahora cada vez mas disfruta mas las comidas saladas, la especies y las texturas.

  • 1/2 lata de atún blanco (en agua)
  • ½ taza de guisantes congelados
  •  taza de queso cheddar
  • 2 huevos (en la foto solo aparece uno pero terminé utilizando dos)
  • 1/2 taza de leche (usé @ripplefood leche de guisantes)
  • 1 tbs levadura nutricional
  • Pimienta negra
  • Tomillo
  • Opcional: 1 cucharada harina blanca
  1. Calienta el horno a 350 grados
  2. Bate los huevos con un tenedor
  3. Mezcla todos los ingredientes en un bowl (Si tu bebe es mas pequeño o no te sientes tranquila dandole pedazos grandes de comida pues elegir batirlo todo en una licuadora)
  4. Engrasa una bandeja de muffins y pon la mezcla utilizando una cuchara uniformemente en cada molde (Yo usé unos moldes de silicona pequeños)
  5. Entra la bandeja al horno por 20 minutos o hasta que comienzen a ponerse dorados (Yo siempre les entro un cuchillo para asegurarme que el huevo no está crudo, de la misma forma que chequeamos los bizcochos!)
  6. Saca la bandeja y asegúrate que esten COMPLETAMENTE FRIOS antes de servirlo!
  7. Hice dos anoche y guarde el resto en un recipiente hermético en la nevera, para su comida de hoy

Baby kale and lentil pancakes

I’m loving making finger food for Abril! Pancakes and muffins are super easy for babies to grab and a great vessel for almost any type food.

These pancakes are packed with protein and were so yummy we all had some for dinner!!

  1. 1/2 cup cooked green lentils
  2. 1 cup steamed baby kale
  3. 1 cup cooked quinoa (make sure it’s completely dry)
  4. 2 eggs
  5. 1 clove of garlic
  6. 1 tbs ghee or any other grass fed butter
  7. 1/2 shallot
  8. 1 tbs nutritional yeast (I use it here as a salt substitute and it’s a complete protein with 9 grams of protein for every 2 tbsp)
  • Sauteé the garlic an onions on the ghee
  • Mix all the the ingredientes in a bowl
  • Transfer the mix to your blender or food processor. I used my Beaba that I love so much!
  • Blend pulsing so it’s not to liquidy and the baby can have more texture with chunks of lentils and kale
  • Heat a frying pan and fry your pancakes in a little bit more ghee
  • Wait until they are completely cold before serving!
  • I served them with one piece vegan crispy tender, some sweet potato and avocado she loved them! There were some roasted eggplant slices but she completely ignore them lol

Estoy fascinada cocinándole a Abril, me encanta! Las panquecas y los muffins son buenísimos para incorporar cualquier tipo de comida y sobre todo muy fácil para ellos de agarrar.

Estas panquecas de col rizada y lentejas están llenas de proteina y resultaron tan deliciosas que todos en casa comimos de cena!

  1. 1/2 lentejas verdes cocinadas
  2. 1 taza col rizada hervida
  3. 1 taza de quinoa cocinada (asegúrate de que este bien seca)
  4. 2 huevos
  5. 1 diente de ajo
  6. 1 cucharada de mantequilla clarificada
  7. 1/2 chalote (o cebolla pequeña)
  8. 1 cucharada levadura nutricional (aquí lo uso para para substituir la sal y tiene MUCHISIMA proteína)
  • Saltea el ajo y la cebolla en la
  • Mezcla todos los ingredientes en un contenedor
  • Pasa la mezcla a tu licuadora o procesador de alimentos. Yo uso mi Beaba que amo tanto!
  • Mezcla solo pulsando para que el bebe pueda tener mas texturas con pedacitos de lentejas y col rizada
  • Calienta una sartén y frie las panquecas son un poquito mas de mantequilla clarificada
  • Espero que estén completamente frias antes de servilas
  • Yo se las serví con un nugget vegano, batata y aguacate, le encantó todo! También le había puesto unas rodajas de berenjena rostizada pero ella las ignoro por completo jeje

Quinoa and banana oat bites

I made these a while ago and completely forgot to post them!

They were a hit, Abril loved them, specially because I dipped them (and let her dip them) in plain yogurt.

  • 1 cup cooked quinoa (make sure it is completely dry)
  • 1/2 cup cups rolled oats
  • 1 medium banana
  • 3 prunes (you can totally do it without the prunes but I always try to incorporate some prunes in her meals since she suffers from constipation)
  • 2 tbs plain yogurt to dip (Abril loves yogurts but you can also dip in any nut butter)
  1. Preheat the oven to 350f
  2. Add the quinoa and oats to a large bowl.
  3. Boil the prunes for 5 minutes and puree them
  4. Mash the banana
  5. Mix all the ingredient together and start rolling balls, make sure they are not too small so the babies can hold them (I made 15)
  6. Place them on the tray with parchment paper and bake in the oven for 15 minutes (or until they start to turn golden)
  7. Make sure you let then cool off before serving
  8. Store in an airtight container in the fridge for 2-3 days.

Bocaditos de quinoa, banana y avena!

Los hice hace ya un tiempo pero se me olvido por completo postearlo.

A Abril les encantaron! Sobre todo porque se los mojé con yogurt sin azúcar (su favorito)

  • 1 taza de quinoa cocinada (asegurate que este bien seca)
  • 1/2 taza avena
  • 1 guineo mediano
  • 3 ciruelas (pueden hacerlo sin esto perfectamente, yo siempre trato de incorporar un poquito de ciruela en sus comidas porque sufre de estreñimiento)
  • 2 cucharadas yogurt sin azúcar para remojar plain yogurt to dip (Abril ama el yogurt, pero también pueden remojarlas en cualquier mantequilla de nueces)
  • Calienta el horno a 350 grados
  • Mezcla la quinoa y la avena en un bowl
  • Hierve las ciruelas por 5 minutos y haz un puré
  • Maja el guineo
  • Mezcla todos los ingredientes y empiezas a hacer bolitas no muy pequeñas para que le sea fácil agarrar
  • (a mi me salieron 15)
  • Ponlas en una bandeja y mételas al horno por 15 minutos (o hasta que se empiezen a poner doraditas
  • Esperi que se enfríen completamente antes de servirlas
  • Las puedes guardar en la nevera por 3 días un recipiente hermético

Yogurt silly putty ! 


Super simple, natural way to make silly putty with only 2 ingredients

Yogurt – I used this strawberry sugar free one just in case she put some in her mouth, but she didn’t. Also make sure it doesn’t gave any fruit chunks

Corn starch​

​​- Mix together 1 cup of yogurt and 3/4 cups of corn starch- When the mixture is no longer sticky, pick it up and roll the putty into a ball (to further mix everything together)

– If it’s too sticky, sprinkle in additional corn starch. If it’s too dry, add a bit more yogurt

.

So much fun, smells super yummy and it’s super easy to clean! Just wipe with a wet rag.

This silly putty is only good for one time since it has yogurt and it goes bad. Make sure to throw away and make a new batch every time

Masilla hecha a base de yogurt!

Facilísima forma de hacer masilla natural con solo dos ingredientes.

.

Yogurt – Usé uno de fresas sin azúcar por si se metía algo en pa boca, pero no lo hizo

Maicena. También asegúrense que sea uno que no tenga pedacitos de fruta

.

– Mezcla 1 taza de yogurt y 3/4 taza de maicena

– Cuando la masilla ya no esté pegajosa, cógela con las manos y forma una bola (así lo terminas de incorporar todo bien)

– Si está muy pegajosa agrega mas maicena y si está muy seca agrega mas yogurt

.

Huele rico, es super divertido y se limpia super fácil 

Esta masilla no se puede guardar ya que tiene yogurt y se daña. Cada vez que quieran jugar deben hacer una masilla nueva

Banana french toast BLW 🍌

Abril has almost 10 months already, so crazy!

She loves food so much, we still haven’t found something she doesn’t like! But for the past 2 weeks she has been playing a lot with her food and not really eating a lot of solids. It hurts me to throw away food, what she doesn’t eat for breakfast I offer for lunch, and what she doesn’t eat for lunch I offer for dinner. So, this morning I decided to only give her 3 pieces of toast and ended up having to make 2 more! Every time I make something and she devours it I jump of happiness!

Ingredients:
1 Banana (the picture only shows half, but I ended up using the whole banana)
1 oz Milk (I used breast milk, you can use formula, almond, coconut, etc)
1 egg
Cinnamon and vanilla to taste
1 tbs @yumbutter sunflower butter

  1. Mash the banana and mix with the egg, milk, cinnamon and vainilla
  2. I didn’t want any chunks of banana to burn so I blend the mixture on my Beab (you can use any regular blender)
  3. Cut the bread finger size  (I used an english muffin because that is all I had, next time I will use whole wheat loaf)
  4. Soak the bread in the banana mixture for 30 seconds on each side
  5. Melt a little coconut oil (or butter) on a frying pan
  6. Fry the bread slices 1 or 2 minutes on each side, or until golden
  7. Spread a little nut butter on top (I used sunflower, with peanut butter must be delicious too)
  8. Let the babies eat!!!!

I also gave her 3 peach slices, but I waited after she was done with the french toast. I noticed that she gets overwhelmed when she sees too much food and ends up playing with everything

Tostadas Francesas de guineo 🍌

Mi pequeña tiene casi 10 meses ya, no puedo creerlo!

Ella ama la comida, todavía no le hemos dado algo que no le haya gustado! Pero las últimas dos semanas se las ha pasado jugando mucho con la comida y realmente no está comiendo tantos sólidos como antes.  Me da mucha pena tirar comida a la basura, lo que ella no se come en el desayuno se lo ofrezco en la comida, y lo que no se come en la comida se lo ofrezco de cena. Por lo que esta mañana decidí solo hacerle 3 pedacitos de tostada y se los comió tan rápido y con tanto gusto que tuve que hacerle 2 mas. Ya se imaginaran que bien me hace sentir cuando le hago algo que le gusta tanto!

1 guineo (la foto solo muestra la mitad pero terminé usando el guineo completo)
1 oz de leche (usé leche materna, pero pueden usar formula o el tipo que deseen)
1 huevo
Canela y vainilla al gusto
Una cucharada de mantequilla de girasol

  1. Haz un puré con el guineo y mézclalo con el huevo, la lecha, canela y vainilla
  2. Lo batí en mi procesador de comida para que me quedara bien liquido y no hubieran pedacitos que pudieran quemarse (pueden usar una licuadora cualquiera)
  3. Corta el pan en pedazos en tamaño de un dedo (cualquier tipo de pan funciona)
  4. Remoja el pan en la mezcla de guineo por 30 segundos de cada lado
  5. Pon a derretir un poquito de aceite de coco o mantequilla en una sartén
  6. Fríe las tostadas por 1 o 2 minutos de cada lado, ó hasta que estén doraditas
  7. Unta la mantequilla de nueces por encima (yo usé de semillas de girasol, con la de maní debe de estar super rico también)
  8. A comer se ha dicho!

También le serví 3 pedazos de melocotón, pero se los di después que terminó con las tostadas. Me he dado cuenta que cuando ve mucha comida en la bandeja se abruma y termina jugando con todo
