Vegan sweet Potato Pancakes with peanut butter yogurt!

I’ve made sweet potato pancakes several times but I have finally perfected my recipe!

These are SO yummy, moist and fluffy. The small ones don’t come out as fluffy because of the size but the large version (mama’s version) are!

This recipe makes 6 large pancakes or 12 small ones.

1/2 all purpose flour (I used @bobsredmill gluten free)
1/2 tablespoon baking powder
Pinch of sea salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
3/4 cups non dairy milk (I used oat milk from @pacificfoods )
1/2 cup mashed cooked sweet potato (about 1 small one) I steamed and puree using my @beaba_usa
Coconut oil to cook

Because these are super sweet by nature I did not add any coconut nectar, instead I just mixed 1/4 plain full fat yogurt with 2 tablespoons of creamy peanut butter (this have been a favorite of Abril for a while now)

Added some raspberries (her ultimate favorite fruit for the past 2 months) and sprinkled some hemp seeds on top.

Whisk together flour, baking powder, salt, cinnamon and ginger. In a separate bowl whisk together non dairy milk and sweet potato puree. Combine dry and wet mixture and whisk. Be careful to not over mix!!

Lightly oil a large nonstick skillet over medium heat. Pour the batter into the skillet (for Abril’s pancakes I used 2 tablespoons and for mine 1/4 cup). The small ones while take about 1 minute to cook on each side (wait until you start seeing tiny bubbles). The large ones will take about 3 minutes. Flip and let cook on the other side until lightly browned and cooked through. Repeat with remaining batter, adding more oil to the skillet as needed. If the batter becomes too thick, add a little more nondairy milk, 1 tablespoon at a time.

Hope you guys try it and love it as much as we do!

Mini tuna and pea quiches

Ok, so these were not the prettiest but they were super delicious and super easy to make!

It was Abril’s second time eating tuna and she really liked it. I love how her palate is evolving, she used to go more for sweet, softer foods and now more and more she is enjoying savory meals, spices and textures.

I served them with some sweet potato puree and two slices of cucumber

  • 1/2 can albacore tuna (in water, drained)
  • ½ cup of frozen peas
  •  cup cheddar cheese
  • 2 eggs (only one pictured here but I used two)
  • 1/2 cup milk (I used @ripplefood pea milk)
  • 1 tbs nutritional yeast
  • Black pepper
  • Thyme
  • Optional: 1 tbs white flour
  1. Preheat oven to 350f
  2. Beat the eggs with a fork
  3. Mix all the ingredients in a bowl (You can choose to blend everything if your baby is younger or you just don’t feel comfortable giving them chunky foods)
  4. Grease a muffin tray and spoon the mixture evenly into each space (I always use this tiny silicone molds)
  5. Place in the oven and bake for about 20 mins or until golden (I always stick a knife inside to check if the eggs are not runny)
  6. Take out of the oven and LET IT COOL COMPLETELY before serving
  7. I made two quiches last night and saved the rest on an air tight container in the fridge for today’s lunch

  • 1 tbs levadura nutricional
  • Pimienta negra
  • Tomillo
  • Opcional: 1 cucharada harina blanca
  1. Calienta el horno a 350 grados
  2. Bate los huevos con un tenedor

Banana french toast BLW 🍌

Abril has almost 10 months already, so crazy!

She loves food so much, we still haven’t found something she doesn’t like! But for the past 2 weeks she has been playing a lot with her food and not really eating a lot of solids. It hurts me to throw away food, what she doesn’t eat for breakfast I offer for lunch, and what she doesn’t eat for lunch I offer for dinner. So, this morning I decided to only give her 3 pieces of toast and ended up having to make 2 more! Every time I make something and she devours it I jump of happiness!

1 Banana (the picture only shows half, but I ended up using the whole banana)
1 oz Milk (I used breast milk, you can use formula, almond, coconut, etc)
1 egg
Cinnamon and vanilla to taste
1 tbs @yumbutter sunflower butter

  1. Mash the banana and mix with the egg, milk, cinnamon and vainilla
  2. I didn’t want any chunks of banana to burn so I blend the mixture on my Beab (you can use any regular blender)
  3. Cut the bread finger size  (I used an english muffin because that is all I had, next time I will use whole wheat loaf)
  4. Soak the bread in the banana mixture for 30 seconds on each side
  5. Melt a little coconut oil (or butter) on a frying pan
  6. Fry the bread slices 1 or 2 minutes on each side, or until golden
  7. Spread a little nut butter on top (I used sunflower, with peanut butter must be delicious too)
  8. Let the babies eat!!!!

I also gave her 3 peach slices, but I waited after she was done with the french toast. I noticed that she gets overwhelmed when she sees too much food and ends up playing with everything

Let me know what your kiddos think of these if you try them!

Coconut Bark Face Scrub

I’ve been using this amazing vegan face scrub for 2 months and I can honestly say it is one of my top 3 right now!

It has been inside my shower since the first time I used, ainhave been using it at least 3 times a week.

The smell is deliciously sweet, the texture is very creamy instead of a harsh sugar scrub, the coconut bark is so fine it makes for a smooth application that can work perfectly even on the most delicate skin. It leaves my skin feeling silky, super soft and very hydrated.

It’s made with Amazonian organic ingredients and 100% natural exfoliants from coconut bark which removes dead cells and impurities, organic Buriti and coconut & mango essential oils

The oil extracted from the buriti fruit is rich in many nutrients, including essential fatty acids, vitamins, and beta carotene. In fact, the oil is said to provide the richest known source of beta carotene (even more than carrot seed oil)

Natives used the oil to treat skin burns, because of its calming, soothing, and regenerating properties.

In addition to these benefits, buriti also has a natural anti-inflammatory reaction that can tame redness and calm skin conditions like psoriasis and eczema. It’s also deeply hydrating, and can help reduce the dryness of winter and mature skin, producing a more supple, softer look and feel.

Surya Brasil has begun to sustainably harvest their own Buriti while helping to strengthen the organic farming industry and help Brazil’s nature conservation.

Made from sustainably-harvested, no GMO’s ever! Free from BHT, EDTA, paragons, ulfates, phthalates, silicone, ethyl alcohol, artificial dyes and synthetic fragrance

Raw cacao, hazelnut & coffee smoothie for the happy soul

Rise and shine!!

Ive never been a huge coffee drinker but I do like to have my decaf in the mornings every now and then.

The only reason I have decaf is because I am very sensitive to caffeine, even a little coffee or green tea makes me overly excited and I personally don’t like it.

Some people try to stay away from it but the reality is drinking coffee in moderation has many scientific proven health benefits, here are some:

  1. Although most people think of coffee as nothing but hot water and coffee grounds, people forget that coffee beans for have important organic compounds and nutrients, including a range of B-family vitamins, including riboflavin, pantothenic acid, and niacin, as well as potassium, manganese, and magnesium
  2. A study done by the National Institute of Healthfound that those who drink four or more cups of coffee were about 10 percent less likely to be depressed than those who had never touched the java. And apparently it’s not because of the “caffeine high”. Study author, Honglei Chen, MD, PhD, told that the proposed reason coffee makes you feel good is because of those trusty antioxidants
  3. A study done by the Harvard School of Public Health determined that drinking between two and four cups of coffee can reduce the risk of suicide in men and women by about 50 percent. The proposed reason is because coffee acts as a mild antidepressant by aiding in the production of neurotransmitters like serotonin, dopamine and noradrenaline.
  4. Drinking coffee, both caffeinated and decaffeinated, can help protect your liver. Coffee drinkers have been found to have better levels of liver enzymes, indicating improved liver functioning. The drink can also help lower liver cancer risk in those who consume three or more drinks a day.
  5. Coffee appears to be protective against two types of cancer: liver cancer and colorectal cancer. Liver cancer is the third leading cause of cancer death in the world, while colorectal cancer ranks fourth. Studies show that coffee drinkers have up to a 40% lower risk of liver cancer. One study of 489,706 individuals found that those who drank 4-5 cups of coffee per day had a 15% lower risk of colorectal cancer.
  6. Coffee also lowers risk of Type 2 diabetes, according to a study from The American Chemical Society. The study’s researchers found that people who drink four or more cups of coffee a day reduce their chances of developing Type 2 diabetes by 50 percent. Subsequently, with every additional cup, the risk gets lowered by 7 percent.
  7. Researchers from the University of South Florida and the University of Miami found that people older than 65 who had higher blood levels of caffeine developed Alzheimer’s disease two to four years later than others with lower caffeine. Dr. Chuanhai Cao, a neuroscientist at the USF, and co-author of the study, said, “We are not saying that moderate coffee consumption will completely protect people from Alzheimer’s disease. However, we firmly believe that moderate coffee consumption can appreciably reduce your risk of Alzheimer’s or delay its onset.”

And there you have it, dont ever feel bad for drinking a little coffee!

Now for the yummy recipe I found on

1 cup freshly brewed coffee (or two espresso shots)

1 ripe banana

1 cup raw hazelnuts

3 cups water

1 tbsp raw cacao powder

1 tbsp raw honey*

1/4 tsp vanilla extract (optional)

1 teaspoon maca powder (optional)

1/4 tsp raw cacao nibs (for garnish)

Soak hazelnuts in water for about an hour to soften and then blend with the water to make hazelnut milk (you can use a nut milk bag or a cheese cloth to strain and discard the pulp).

Blend hazelnut milk with the rest of the ingredients until smooth. Add more coffee or water if needed

Garnish with raw cacao nibs if using

Drink right away or store in the refrigerator

* You can use other healthy sweetener of choice, such as maple syrup, dates or molasses

Washing kale has never been easier 💚

Even thought we only buy organic fruits and veggies we always like to wash it, after all we all know how many hands will touch a piece of fruit or a vegetable before we consume it.
I always soak everything in a 3 part water to 1 part vinegar concoction for 15 minutes. I’ve been doing that for a long time that and It does the trick but it was a little time consuming.

Miracle Produce from Natural Way Organics is a 100% natural and organic produce cleaner.
It washes away residual dirt, wax, grime and it makes the whole cleaning process faster and easier thanks to the spray dispenser. Quick spray of Miracle Produce, rub for 30 seconds, rinse with water and voila!! Clean produce with no weird after taste.

The three main ingredients are saponified organic coconut, olive oil and jojoba

The term saponification is the name given to the chemical reaction that occurs when a vegetable oil or animal fat is mixed with a strong alkali.

The saponification process is a simple one-step reaction with no waste generated: the glycerin is split off from the fatty acids, and the fatty acids combine with the sodium or potassium to form soap, while the hydroxide forms water. The result is soap, glycerin and water (no alkali remaining)
Also included in the mix: orange and tea tree essential oils, organic aloe vera and rosemary extract

For just $6.99 you get this huge 16oz bottle. So worth it!!
